Peats Rockhampton Spicy ( Indonesian Food, Special Jakarta )
Ingredients:
- 500 grams of fish cork
- � teaspoon lemon juice
- 3 cloves garlic
- � tsp coriander
- 1 teaspoon salt
- Oil to fry
Gravy :
- 800 ml of water
- 2 stem Serai, finely sliced
- 2 pieces of leaves
- 2 cm alpina galanga , strike
- 4 pieces orange leaves, shred
- 1 tablespoon salt
- � tea spoon sugar
- 4 tablespoons of oil need to
- 2 tomato leaf and stem
- 2 onion, roughly sliced
- 1 tablespoon fried onion
- 12 pieces of red cayenne pepper
Spices fine:
- 10 pcs onion
- 5 cloves garlic
- 4 eggs candle, sangrai
- 60 grams kluwak, soaked warm water
- 1 cm turmeric roasted
- 6 units of red chilli curls
- 5 fruit cayenne
Method:
- Puree to flavor fish, garlic, coriander and salt. Then smear on fish cork with spices that are mashed. Leave for 10 minutes so that the flavor permeate.
- Fry the fish until the cork yellow-brown. Lift, Drain.
- Heat oil, stir-fry seasoning fine, lemon-grass bay, orange leaves, alpina galanga and lemon-grass until fragrant. Cast cooking water to boil.
- Enter the fish, cork, which is fried, give tomatoes, onions, salt, sugar and cayenne red.
GABUS PUCUNG PEDAS (MAKANAN INDONESIA KHAS JAKARTA )
BAHAN :
500 gram ikan gabus
� sendok teh air jeruk nipis
3 siung bawang putih
� sendok teh ketumbar
1 sendok teh garam
Minyak untuk menggoreng
KUAH :
800 ml air
2 batang serai, iris halus
2 lembar daun salam
2 cm lengkuas, memarkan
4 lembar daun jeruk, cabikcabik
1 sendok makan garam
� sendok teh gula pasir
4 sendok makan minyak untuk menumis
2 buah tomat
2 batang daun bawang, iris kasar
1 sendok makan bawang goreng
12 buah cabe rawit merah
BUMBU HALUS :
10 buah bawang merah
5 siung bawang putih
4 butir kemiri, sangrai
60 gram kluwak, rendam air hangat
1 cm kunyit bakar
6 buah cabe merah keriting
5 buah cabe rawit
CARA MEMBUAT :
- Haluskan bumbu untuk ikan, bawang putih, ketumbar dan garam. Kemudian lumuri ikan gabus dengan bumbu yang sudah dihaluskan. Diamkan selama 10 menit agar bumbu meresap.
- Goreng ikan gabus hingga kuning-kecoklatan. Angkat, tiriskan.
- Panaskan minyak, tumis bumbu halus, serai daun salam, daun jeruk, lengkuas dan serai hingga harum. Tuang air masak hingga mendidih.
- Masukkan ikan gabus yang sudah digoreng, beri tomat, daun bawang, garam, gula pasir dan cabe rawit merah.
